The first French producer to join TAPAS shop, Hameau des Saveurs won me over with its authenticity, deep respect for gastronomic tradition, and its local, quality-driven approach to mastering the ingredients essential for crafting preserves. As the proud heir of a long line of farmer-breeders deeply rooted in the traditions of the terroir, Michel Monteil, with over thirty years of expertise and recently recognized as a Master Craftsman, has elevated his products to a standard of excellence.
For over three decades, foie gras and South-Western gastronomy have been a true family affair. It all began at the Hameau des Saveurs, nestled in the peaceful Maxou valley, near Cahors, at the heart of the family estate where a passion for fine cuisine has been passed down from generation to generation.
A family and terroir story
In the heart of the Lot, in a place where authenticity and gastronomy meet, over thirty years ago Michel Monteil chose to revive the family hamlet by setting up an artisanal workshop. His ambition: to preserve the recipes and expertise inherited from his ancestors while adding a modern touch, with full respect for tradition. While Hameau des Saveurs remains a symbol of his roots, the company has adapted to market changes and current demands. Following its success and in response to increasingly strict European regulations, Michel Monteil and his team invested in 2011 in a new production facility located south of Cahors. This spacious and modern workshop meets growing demand while maintaining the high standards and attention to detail for which they are renowned.
Expertise passed down and modernized
Today, the production site is located in Fontanes, just ten kilometers from Cahors. There, surrounded by a skilled and passionate team, the company produces a full range of gourmet products based on duck and pork. Three guiding principles shape their work every day: Respect, Authenticity, Quality. Each recipe is crafted as a tribute to Quercy’s culinary tradition while meeting modern hygiene and safety standards.
Authentic products with timeless flavors
The ingredients, carefully selected, are all certified and sourced through short supply chains: Label Rouge free-range pork from the South-West, AOC/AOP cheeses and wines, and other regional specialties. No coloring agents or preservatives are added—only the natural quality of the ingredients. The process includes knife-cut mincing, resulting in generous pieces and a light texture. For preserves, an innovative dry vacuum process is used to lock in fat for a softer texture and better presentation while avoiding oxidation, all without additives. Each step of production is carefully monitored: weight, vacuum, and specific thermal treatments for each recipe.
Traceability and culinary excellence
Cooking is monitored with integrated probes, ensuring precise temperature control and perfect pasteurization or sterilization levels. Once out of the autoclaves, each batch is assigned a unique number, guaranteeing complete traceability throughout its shelf life (DLC, DLUO). The goal: to deliver a product that meets strict safety standards while offering optimal flavor and texture.
