What is Serrano ham?

Serrano ham is a traditional Spanish dry-cured ham made from the hind legs of white-breed pigs. Its name comes from the Spanish word "sierra", meaning mountain. For centuries, hams were cured in Spain's mountainous regions, where climatic conditions favored a slow and natural maturation process.

Today, Serrano ham still holds a central place in Spanish gastronomy. Found in tapas bars, restaurants and homes throughout the country, it is one of Spain's most widely consumed food products. Its pinkish-red meat, pearly white fat and balanced flavors make it a delicacy appreciated by both casual consumers and connoisseurs.

How is Serrano ham made?

The production of Serrano ham is based on traditional know-how passed down through generations. After preparation, the hams are salted to ensure proper preservation. They are then transferred to curing rooms where a long maturation process begins.

During this curing period, which can last from 12 to more than 24 months depending on the product, the ham gradually loses part of its moisture while developing its characteristic aromas. This stage is essential to achieve the tender texture and rich flavor that define a quality Serrano ham.

Mountainous regions such as Sierra Nevada in Andalusia provide particularly favorable conditions for this natural curing process thanks to their altitude and dry climate.

What is the difference between Serrano ham and Iberian ham?

Serrano ham is often compared to Iberian ham, another renowned Spanish specialty. The main difference lies in the breed of pigs used. Serrano ham is produced from white-breed pigs, whereas Iberian ham comes from Iberian pigs, which are mainly raised in the south-western part of the Iberian Peninsula.

Iberian ham generally contains more intramuscular fat and offers more intense flavors. Serrano ham, on the other hand, has a milder and more delicate profile, making it particularly suitable for everyday enjoyment. Both products are part of Spain's gastronomic heritage and cater to different tastes and preferences.
