The picual variety is the most cultivated in Spain, 900 000 hectares in 2017 (source: Spanish Ministry of Agriculture). It owes its name to the tip or spike that forms on the fruit. Black color at the end of the maturation. An early harvest is however a sign of quality. This will be the case for this selection: the 3 oils are produced only from green olives.
This variety gives an oil of great stability, quite aromatic with a slight bitterness and a characteristic pungency on the finish. It is the variety grown mostly in the appellations of Jaén and Córdoba, often used in monovariety.
