What printed mark should an Iberian ham bear?
According to the quality standard for Iberian ham, all hams must have the initials MAPA (Ministry of Agriculture, Fisheries and Food) and four digits printed on the skin, either in fire or in ink: the first two belong to the week in which the ham was salted, and the last two show the year in which it was salted. In this way there is a record of the exact date on which the curing process began. Also from the date mentioned, we can deduce if the Iberian ham is acorn-fed. Acorn-fed hams (which have not been previously frozen) will be salted between 15 December and 31 March (week 52 to 14). The others can be salted any week of the year.
