A 100 g plate of ham, ready to eat
Marcial Castro 50% Iberian Cebo de Campo Ham PDO Guijuelo is presented here hand-sliced and vacuum-packed in a 100 g pouch. This format makes it easy to enjoy Iberian ham cured in Guijuelo, without having to buy a whole ham or slice it yourself.
Each slice is cut by hand with a knife to preserve the ham's delicate texture and highlight its appearance, marbling and texture. The 100 g pouch is particularly convenient for an aperitif, a tasting or as part of a Spanish Iberian charcuterie board.
A PDO Guijuelo Cebo de Campo ham
This ham belongs to Class III of the PDO Guijuelo, which covers Iberian Cebo de Campo hams. This category applies to pigs with at least 50% Iberian breed, raised outdoors under the conditions established by the PDO specifications.
For 50% and 75% Iberian hams, the PDO specifications require, among other conditions, a minimum weight of 7 kg and a minimum production period of 800 days. Certified hams bear the green PDO seal of Guijuelo, together with traceability elements identifying their origin.
The Guijuelo PDO also defines the product's sensory characteristics: meat ranging from pink to purplish red, with a glossy appearance, visible fat infiltration, a low-fibre texture and a delicate, sweet and lightly salted flavour.
Naturally cured in Guijuelo
Marcial Castro produces and cures its hams in Guijuelo, near Salamanca, a region with a long tradition of naturally curing Iberian hams. Located at around 1,000 metres above sea level, Guijuelo has a climate marked by contrasting seasons, which contributes to the natural drying and curing process.
At Marcial, the hams are carefully monitored throughout their long curing period, following the traditional methods of the house.
