50% Iberian Cebo de Campo Eíriz Ham – hand sliced

This 100 g pack of 50% Iberian Cebo de Campo ham comes from whole hams selected from our producer Jamones Eíriz, based in Corteconcepción, in the heart of the Sierra de Huelva. We also offer these same whole cebo de campo hams in our shop.
The “Cebo de Campo” designation refers to a specific category of Iberian ham: the pigs are raised in conditions that allow access to the outdoors and their diet is mainly based on cereals and legumes, with the possibility of also making use of available natural resources. In the case of this Eíriz ham, the pigs are 50% Iberian breed, resulting from a cross with the Duroc breed.
Discover the 50% Iberian Cebo de Campo Eíriz ham, cured for at least 24 months in Corteconcepción, in the Sierra de Huelva.
After slaughter, the hams are carefully salted with sea salt for around fifteen days before continuing their long curing process. They then move to the drying room, where time, air and natural temperature variations allow the ham to gradually develop its aromas and texture.
At Eíriz, this ham benefits from approximately two years of curing. As the seasons pass, the fat slowly melts and infiltrates the muscles, giving the ham its characteristic marbled appearance, melting texture and distinctive aromas. This long curing process, combined with the producer's expertise, results in a generous ham that is particularly enjoyable to taste.
Another of this product's distinctive features is its hand slicing with a knife. The slices in this pack are cut by hand, directly at Eíriz, from whole hams. This traditional slicing method produces thin, irregular slices that perfectly showcase the ham's marbling and texture.
To fully appreciate its qualities, we recommend taking the pack out of the refrigerator at least 30 minutes before serving and opening it at room temperature. The fat will gradually soften, allowing the Iberian aromas to fully develop.

A ham to enjoy simply, served on a plate, with good bread or as an aperitif: 100 g of Eíriz Iberian ham, hand sliced, bringing home the pleasure of freshly sliced ham.
