A 100 g plate of ham, ready to eat
This Iberian acorn-fed ham offers a beautiful balance of lean meat and fat.
The slices are hand-sliced with a knife, following the traditional way of serving Iberian ham. Thin and delicate, they are ready to be arranged directly on a plate or an Iberian charcuterie board.
A 75% Iberian Acorn-Fed Ham closely associated with Guijuelo
75% Iberian Acorn-Fed Ham PDO Guijuelo holds a very particular place in the world of Iberian ham. Among the major protected designations of origin in the sector, the 75% acorn-fed category is particularly well represented in Guijuelo.
Data from the Spanish Ministry of Agriculture, Fisheries and Food (MAPA) for 2022 illustrates this particularity: the Guijuelo PDO recorded 41,029 75% Iberian Acorn-Fed Hams, compared with 1,350 for the Dehesa de Extremadura PDO and none for the Jabugo and Los Pedroches PDOs.
These figures come from the official report published by the Spanish Ministry of Agriculture, Fisheries and Food, which details production under the different PDOs according to breed and feeding system.
This characteristic clearly distinguishes Guijuelo from the other major Iberian designations. It is also what makes this reference particularly interesting in our selection: among our producers from different designations, 75% acorn-fed Iberian ham is now a speciality we find with Marcial Castro in Guijuelo.
75% Iberian in recent production
More recent data from the Asociación Interprofesional del Cerdo Ibérico (ASICI) shows that 75% Iberian remains a clearly identified category within Spain's acorn-fed production.
During the 2025/2026 montanera, 598,090 acorn-fed pigs were slaughtered in Spain. Of these, 34,594 were 75% Iberian Acorn-Fed pigs, representing 5.78% of the total. These figures come from the traceability records of the Iberian Quality Standard managed by ASICI.
This category therefore remains a minority compared with 100% Iberian and 50% Iberian Acorn-Fed, but it retains a clearly defined place within the sector. For more details on the figures from this latest campaign, see the data published by ASICI on the 2025/2026 montanera.
An emblematic category of Guijuelo
For Iberian ham lovers, 75% acorn-fed Iberian ham from Guijuelo therefore has a distinctive identity. MAPA statistics show the historical importance of this category within the PDO, while recent ASICI data confirms that it remains well established within the Iberian sector.
For this Marcial Castro reference, the choice of 75% Iberian combines Iberian genetics, acorn feeding and the traditional expertise of Guijuelo.

An Iberian ham with beautiful marbling
75% Iberian Acorn-Fed Ham is characterised by a generous presence of fat naturally marbled through the lean meat. This marbling contributes to the ham's supple texture and allows the fat to gradually melt in the mouth.
Very finely hand-sliced, the ham fully reveals the combination of melting lean meat, marbled fat and maturation aromas. The slices can be enjoyed simply, without accompaniment, to fully appreciate their qualities.
Hand-sliced by Marcial Castro
Hand-slicing with a knife produces thin, supple slices that are perfectly suited to enjoying Iberian ham. It is also the preferred presentation when serving the ham directly on a plate or charcuterie board.
The vacuum packaging protects the slices until they are ready to be enjoyed and makes this format easy to store in the refrigerator. To fully appreciate the ham's aromas and texture, we recommend allowing the slices to return to room temperature for a few moments before serving.
A practical 100 g format to share
This 100 g pouch is particularly convenient for an aperitif, an Iberian charcuterie board or a meal shared with several people. It is also an easy way to discover Marcial Castro ham without having to buy a whole ham.
A few slices of ham, good rustic bread and, if desired, a selection of other Iberian specialities are all you need for a simple and convivial tasting.
