The Marcial Castro 100% Iberian Acorn-Fed Ham Block, Guijuelo PDO offers all the richness of a fine Iberian ham in a practical format that is easy to store and slice at home.
To create this format, the whole ham is deboned and then cut into five pieces, which are individually vacuum-packed. Each block weighs between 800 g and 1.2 kg, depending on the piece. This makes it easy to enjoy an exceptional ham without having to handle a whole bone-in leg.

Acorn-fed ham in 5 vacuum-packed pieces: maza, babilla, punta, contramaza.
A genuine 100% Iberian acorn-fed ham
This ham belongs to the 100% Iberian Acorn-Fed Ham (Jamón de Bellota 100% Ibérico) category. It comes from purebred Iberian pigs whose breeding animals meet the pedigree requirements laid down in the Guijuelo PDO specifications.
During the montanera season, the pigs raised for this category feed on acorns, grass and other natural resources found in the dehesa, without supplementary feed. They roam in this traditional environment before the hams are taken to Guijuelo for their long maturation.
The combination of breed, diet, physical activity and ageing time gives acorn-fed Iberian ham its distinctive character: marbled meat, a melt-in-the-mouth texture and characteristic aromas.
Would you prefer to enjoy the same ham without slicing it yourself? Marcial Castro also offers a 100% Iberian Acorn-Fed Ham, hand-sliced and packed in 100 g vacuum-sealed packs, ideal for serving as an appetiser.

Acorn-fed Iberian ham is best enjoyed in thin slices. In Spain, hand-carving ham is an art in itself.
The Guijuelo PDO guarantee
The Guijuelo Protected Designation of Origin (PDO) sets requirements for the origin, production methods and characteristics of the hams and shoulders covered by the designation.
100% Iberian acorn-fed ham belongs to Class I of the Guijuelo PDO. The specifications require a minimum production period of 1,000 days and a minimum finished-piece weight of over 6.5 kg before deboning and cutting into blocks.
Certified hams are identified by the PDO's black numbered seal, together with the required traceability and labelling information.
Naturally cured in Guijuelo
For more than a century, the Marcial Castro family has continued its traditional expertise in Guijuelo, near Salamanca. The area has long been renowned for the natural curing of Iberian hams.
Located at an altitude of around 1,000 metres, Guijuelo experiences distinct seasons. Natural conditions contribute gradually to the drying and curing process, while the fat develops and becomes integrated into the muscle. Over time, the ham acquires its characteristic texture and aromas.
Now in its fifth generation, the family business Marcial Castro combines this heritage with particular care for every ham.
A boneless ham block to slice as you wish
Each piece is vacuum-packed to protect the ham before opening. This format allows you to slice the ham yourself whenever you wish, choosing the thickness to suit your preferences and the occasion.
Simply cut the amount you need and store the remaining piece properly for future tastings, following the manufacturer's recommendations. It is a convenient way to enjoy 100% Iberian acorn-fed ham gradually, without having to slice a large quantity in advance.
Easy storage
The block is vacuum-packed and has a minimum shelf life of one year, according to the information provided for this product. Always follow the exact date shown on the packaging.
Once opened, carefully protect the cut surface and follow the manufacturer's storage instructions. This will help you enjoy the block over several tastings, provided it is stored under the recommended conditions.
How to enjoy this Iberian ham
To make the most of its aromas, slice the ham thinly with a sharp knife. Cut only the amount you need and allow the slices to reach room temperature before serving, so you can fully appreciate their delicate texture and flavour.
Delicious served simply with bread, this ham also pairs well with other Iberian specialities, including Marcial Castro 75% Iberian Acorn-Fed Lomo. For more serving ideas, read our article on Spanish charcuterie platters.
